General Info
Decoction volume = total mash volume * (target temp - start temp) / (boil temp - start temp). Spund when at 1 P from target gravity (~ .002 SG). Name is a translation of a Czech saying - Naděje umírá poslední.
Procedure
1st decoction: draw ~ 1/2 (+20% as a buffer) of thick mash volume after initial infusion stabilizes at 132°F. Heat at a rate of 2°F per minute while stirring. Hold at 158°F for 15 minutes. Boil for 30 minutes. Return to mash.
2nd decoction: draw 1/3 to 1/2 (+20%) of mash volume after second infusion stabilizes and rests at 147°F. Boil for 30 minutes. Return to mash. This is a looser/thinner decoction - approximately 1/2 mash liquid and 1/2 mash grain.
Mash out at 170°F.
